Aluminium Silicate (E559): What It Is and Is It Safe?

White natural clay mineral (kaolinite). Used as an anti-caking agent in chewing gum and some confectionery coatings. The aluminium in kaolin is in a highly insoluble crystalline form with very low bioavailability. EFSA aluminium TWI guidelines apply to total dietary aluminium, but kaolin contributes very little bioavailable aluminium. Generally considered safe at food use levels.
