Sodium Thiosulphate (E539): What It Is and Is It Safe?

Safe Antioxidant / Stabiliser

Sodium thiosulphate (Na2S2O3). Functions as an antioxidant by reacting with oxidising agents and as a sequestrant to chelate metal ions that would otherwise catalyse oxidative spoilage. Also the medical antidote to cyanide and iodine toxicity. Considered safe at food use levels by EFSA. Limited applications in food.
