Ammonium fumarate is the ammonium salt of fumaric acid, used as an acidity regulator and buffering agent. Fumarate is a normal intermediate of the citric acid cycle and is readily metabolised by the body. It is not authorised as a food additive in the UK or EU, although fumaric acid E297 is.
