Monosodium fumarate is the sodium salt of fumaric acid, used as an acidity regulator and antioxidant to provide a sharp, acidic taste. Fumarate is a natural intermediate of the citric acid cycle and is readily metabolised by the body. It is not authorised as a food additive in the UK or EU, although the parent fumaric acid E297 is.
