Calcium fumarate is the calcium salt of fumaric acid, used as an acidity regulator and buffer and as a minor source of calcium. Fumarate is a natural intermediate of the citric acid cycle and is readily metabolised. It is not authorised as a food additive in the UK or EU, although fumaric acid E297 is.
