Potassium fumarate is the potassium salt of fumaric acid, used as an acidity regulator to impart a tart flavour while contributing potassium. Fumarate is a normal metabolic intermediate of the citric acid cycle and is readily used by the body. It is not authorised as a food additive in the UK or EU, although fumaric acid E297 is.
