Ammonium lactate is the ammonium salt of lactic acid, used as an acidity regulator and buffer. Both lactate and ammonium are normal metabolites, so it carries low toxicity at food-relevant levels. It is not included in the EU/GB authorised additives list, where the permitted lactates are sodium E325, potassium E326, and calcium E327.
