Sodium Erythorbin (E318): What It Is and Is It Safe?

Sodium erythorbin is the sodium salt of an erythorbate-type antioxidant used to prevent oxidation and stabilise the colour of cured foods. The number E318 is not authorised as a food additive in the EU or GB, where the permitted equivalent is sodium erythorbate E316. Like other erythorbates it has no vitamin C activity.
