Dodecyl Gallate (E312): What It Is and Is It Safe?

Dodecyl (lauryl) ester of gallic acid. The most lipophilic of the gallate antioxidants, making it particularly effective in oils and fats. Same family as propyl gallate (E310) and octyl gallate (E311), can trigger allergic reactions in gallate-sensitive individuals. Used at lower concentrations than the shorter-chain gallates due to its higher potency.
