Octyl Gallate (E311): What It Is and Is It Safe?
Octyl ester of gallic acid, a synthetic antioxidant that prevents fat oxidation and rancidity in fats and oils. Related to propyl gallate (E310) but with a longer carbon chain and greater oil solubility. Can cause allergic reactions, particularly in individuals sensitive to aspirin or other gallates. Animal studies showed adverse effects at high doses. Banned in Australia for use in infant and young child foods.
