Ammonium Acetate (E264): What It Is and Is It Safe?
Ammonium acetate is the ammonium salt of acetic acid, used as a buffer and acidity regulator. Both ions enter normal metabolism, acetate through energy pathways and ammonium through the urea cycle, so it carries low toxicity at food-relevant levels. It is not included in the EU/GB authorised additives list, where the permitted acetates are E260 to E263.
