Ammonium Chloride (E510): What It Is and Is It Safe?

Safe Acidity Regulator / Flavour Enhancer

Ammonium salt of hydrochloric acid (NH4Cl). The key ingredient in Nordic-style salty liquorice (salmiakki), where it provides a sharp, characteristic flavour. Also used in breadmaking to control yeast activity. The ammonium content is metabolised safely by healthy livers and kidneys. People with impaired liver function or severe kidney disease should exercise caution.
