The fully neutralised tetrasodium salt of diphosphoric acid (Na₄P₂O₇). Used as an emulsifying salt in processed cheese and as a dispersing agent. Also helps retain moisture in processed meats. High cumulative phosphate intake is linked to kidney damage and increased cardiovascular risk, especially for those with kidney disease.
