Potassium bitartrate (KHC4H4O6), commonly known as cream of tartar. A classic baking ingredient crystallised from wine barrels during fermentation. Used as the acid component in baking powder, to stabilise egg white foams, to prevent sugar crystallisation in confectionery, and to add tartness. Completely safe and naturally derived.
