A mixed crystal of sodium carbonate and sodium bicarbonate (Na₂CO₃·NaHCO₃·2H₂O). Intermediate in alkalinity between E500I and E500II. Less hygroscopic than sodium carbonate, making it easier to handle as a powder. Used as an acidity regulator and mild raising agent. Considered safe at normal food use levels.
