Sodium Carbonate (E500I): What It Is and Is It Safe?

Safe Acidity Regulator / Raising Agent

Anhydrous sodium carbonate (Na₂CO₃). Used as an alkaline acidity regulator and raising agent. In food use, the quantity present is very small and entirely safe. Used in the traditional making of pretzels, some Asian noodles (where it gives a characteristic flavour and yellow colour), and as a pH adjuster in cocoa powder ("Dutch process").
