The di-basic sodium salt of citric acid (Na2HC6H5O7). Less acidic than monosodium citrate (E331I). Used as a buffering agent to maintain pH in the slightly acidic to neutral range, and as an emulsifying salt in processed cheese. Safe, as citrate is a normal body metabolite.
