The mono-acidic sodium salt of citric acid (NaH2C6H5O7). Most acidic of the three sodium citrates, used for precise pH control in slightly acidic products. Also functions as an emulsifying salt in processed cheese. Completely safe, as citrate is a central metabolite in the Krebs cycle.
