2-Phenylphenol (E231): What It Is and Is It Safe?
Synthetic antifungal agent applied post-harvest to citrus fruit skins. Residue remains on the skin and can migrate slightly into the peel layer. Wash citrus thoroughly before zesting. IARC classifies 2-phenylphenol as Group 2B (possibly carcinogenic) based on animal bladder tumour studies. Regulatory residue limits are set well below levels of concern for normal consumption.
