Acid-Treated Starch (E1401): What It Is and Is It Safe?

Safe Modified Starch / Thickener · Thickener

Native starch treated with dilute hydrochloric or sulphuric acid at below-gelatinisation temperature to selectively hydrolyse some glycosidic bonds, reducing molecular weight while keeping the granule largely intact. Produces thin-boiling starches with lower hot-paste viscosity but higher gel strength, ideal for hard-gum confectionery. The acid is neutralised before the product is dried. Considered safe by EFSA.
