Partially hydrolysed starch produced by dry heat treatment (roasting) of native starch, with or without acid. The heat breaks glycosidic bonds and creates new branching, producing shorter, more soluble and more stable starch chains. Some forms are poorly digested and act as dietary fibre (resistant starch). Considered safe by EFSA. Derived from maize, potato, wheat, or tapioca starch.
