Cholic Acid (E1000): What It Is and Is It Safe?
Cholic acid is a primary bile acid the human liver makes naturally to emulsify dietary fats; the E1000 listing reflects a proposed emulsifying use. It is not an authorised food additive in the EU or UK. As a medicine it is used to treat inherited bile-acid synthesis disorders, where high therapeutic doses can affect the liver, but such effects are not expected from any incidental food exposure.
