Sorbitan Trioleate (E496): What It Is and Is It Safe?

Safe Emulsifier

A sorbitan ester, also known as Span 85, formed from sorbitol and three oleic-acid chains, used as a lipophilic emulsifier and crystallisation modifier in fats. It hydrolyses to sorbitol and oleic acid; EFSA's 2017 review of the related sorbitan esters set a group ADI of 5 mg/kg body weight and raised no safety concern. Only the sorbitan mono-esters E491 to E495 are authorised in the EU.
