Potassium Bromate (E924): What It Is and Is It Safe?
Potassium bromate is a powerful oxidising flour improver that strengthens dough. In animal studies it causes renal tubular tumours and is genotoxic, and IARC classifies it as possibly carcinogenic to humans (Group 2B). It is banned as a food additive in the EU, UK and many other countries; residual bromate can persist in baked bread when conversion is incomplete.
