Potassium persulphate is a strong oxidising salt used industrially and, in some countries, as a dough and flour improver. It is a recognised skin and respiratory sensitiser that can cause allergic contact dermatitis and occupational asthma, chiefly from inhaling dust during handling. It is not authorised as a food additive in the EU or UK.
