Benzoin is a balsamic resin from Styrax trees containing benzoic acid and cinnamic acid esters, historically used in trace amounts as a glazing agent and as a flavouring. It forms an inert surface coating and today is encountered mainly as a flavouring rather than a functional additive. It is not an authorised food additive in the EU or UK.
