Ethoxylated Mono- and Diglycerides (E488): What It Is and Is It Safe?

Mono- and diglycerides reacted with ethylene oxide to give a polyoxyethylene, or PEG, emulsifier used mainly as a dough conditioner and whipping agent. Because the ethoxylated portion is not fully broken down to ordinary dietary components, its food uses are restricted. The US FDA authorises it under 21 CFR 172.834, and it is not authorised in the EU.
