Dipotassium Phosphate (E340II): What It Is and Is It Safe?

The di-basic potassium salt of phosphoric acid (K₂HPO₄). Used as an emulsifying salt in non-dairy creamers and processed cheese, and as a buffering agent. Same phosphate concerns apply; potassium content is additionally relevant for people with kidney disease or on potassium-restricted diets.
