Natural phospholipid lecithin, the most widely used food emulsifier in the world. Extracted primarily from soya beans, sunflower seeds, or egg yolk. Enables oil and water to mix, improving texture, preventing separation, and extending shelf life. People with a severe soya allergy should be aware that soya lecithin may trigger reactions in highly sensitive individuals, though many tolerate it. Nutritionally, lecithin provides choline, important for brain and liver health.
