Sodium Diacetate (E262II): What It Is and Is It Safe?

Safe Preservative / Acidity Regulator

A molecular combination of sodium acetate and acetic acid in approximately a 1:1 molar ratio. Releases acetic acid in the food matrix, acting simultaneously as an acidity regulator and a preservative against mould and rope-forming bacteria in bread. Widely used in crisps and snack seasonings. Considered safe by EFSA and FDA.
