Acetylated distarch glycerol is a dual-modified starch: food starch is cross-linked with glycerol bridges and then acetylated, combining heat and acid stability with improved texture and reduced retrogradation. Like other modified starches it is hydrolysed by intestinal enzymes to glucose, with unabsorbed material fermented by the gut microbiota. The EU and UK permit the analogous phosphate- and adipate-crosslinked acetylated starches E1414 and E1422 but not the glycerol-crosslinked form.
