Calcium Sodium Polyphosphate (E543): What It Is and Is It Safe?

Calcium sodium polyphosphate is a chain phosphate used as an emulsifier, stabiliser and texturiser, particularly in dairy and meat products. As a polyphosphate it contributes to total dietary phosphate intake, for which EFSA established a group ADI of 40 mg phosphorus per kg body weight per day in 2019. EFSA based the ADI on effects of high phosphate intake on the kidney and found exposure may exceed it in younger age groups; high phosphate-additive intake is also associated with cardiovascular risk.
