Ammonium Hydrogen Carbonate (E503II): What It Is and Is It Safe?
Ammonium bicarbonate (NH₄HCO₃), also a traditional baking raising agent. Decomposes on heating into carbon dioxide, ammonia, and water, all of which escape completely during baking leaving no residue. Slightly lower leavening power than ammonium carbonate (E503I). Used for the same traditional biscuit and cracker applications. Considered safe.
