Succistearin, chemically stearoyl propylene glycol hydrogen succinate, is a synthetic emulsifier used as a dough conditioner and in shortenings. It hydrolyses during digestion to stearic acid, propylene glycol and succinic acid, all normal metabolites. The US FDA authorises it under 21 CFR 172.765.
