Non-amidated pectin, a natural structural polysaccharide found in the cell walls of all higher plants, extracted commercially from citrus peel and apple pomace. Forms gels by different mechanisms depending on esterification: high-methoxy pectins gel with sugar and acid (classic jam making); low-methoxy pectins gel with calcium ions. Acts as a soluble dietary fibre with well-documented cholesterol-lowering and blood sugar-moderating benefits. Completely safe and beneficial to health.
