Gelling Agent
A protein obtained by partial hydrolysis of collagen from animal skin, bone and connective tissue. It forms thermoreversible gels and is digested as ordinary dietary protein into peptides and amino acids. It has a long history of safe food use, and is not suitable for vegetarians or vegans.
