Monosodium salt of malic acid (NaHC4H4O5). Used as an acidity regulator and to impart a mild, clean sour/fruity taste. Malic acid is naturally abundant in apples. Also acts as a humectant. Malate is a key intermediate in the Krebs cycle, making it a normal and essential metabolite.
